    Head of Culinary & Product Development

     

    The Head of Culinary & Product Development will provide high level expertise and creativity in the development and research for new and/or existing menu items, product categories and processes, to support the goals of the brand from a culinary and technical discipline. In conjunction with the Marketing, Purchasing and Operations teams, this position will manage the strategic direction for Bento Sushi’s culinary operations.

     

    Responsibilities:

    • Innovative culinary development of products for all channels of business in both Canada and the USA which include:
      • Onsite fresh sushi (1 -3 day shelf-life)
      • Factory prepared sushi (6 day shelf-life)
      • Hot food products/programs
      • Equipment requirements/sourcing
    • On-going review of current products to identify opportunities and gaps,in order toimprove execution, profit and viability
    • Function in the capacity of Project Leader for all product development projects, from ideation/inception through introduction and full roll-out
    • Co-ordinates all product tasting/testing with Senior Brand Team. Compiles, evaluates and analyzes test results to provide recommendations and next steps
    • Recipe creation and documentation
    • Work closely with Purchasing team on sourcing, testing and production of new menu items and new ingredients; liaise directly with vendors and suppliers
    • Work closely with the Quality Assurance team,to monitor quality of all food and beverages being delivered from our suppliers and act urgently to resolve quality issues if they arise; act as the Culinary lead with the team on items related to shelf-life, sensory/microbial testing
    • Costing and maintenance for regional pricing, including US and Canada, and provide recommendations on retail pricing based on market knowledge and costs
    • Work closely with Training Team to bring new products and categories to market
    • Competitive reviews and trend evaluation in order to create pipeline of product innovation
    • Oversee and manage Product Development budget
    • Assist with preparation, styling and guidance of menu items for photo shoots, video content, and customer account meetings

     

    Education:

    • Culinary Diploma or Degree
    • Bachelor’s Degree in Food Science, Food Technology or related field- would be an asset

     

    Knowledge, Skills and Abilities:

    • Passion for food, flavours, trends and recipe development
    • Strong exposure to Asian culinary influences especially Japanese (would be an asset)
    • Sushi experience / Rice knowledge / Seafood knowledge (would be an asset)
    • Must have thorough knowledge of food products, recipe and procedural writing, costing and manufacturing, plus an understanding of food service equipment knowledge and operations/operational workflow processes
    • Must have excellent communication and presentation skills; candidate must be comfortable being the “culinary” lead of Bento to potential and current B2B partners and end-users
    • Flexibility and “out of the box” mindsetin order to bring alternative solutions to the table
    • Must have a high degree of adaptability as product development is ever changing
    • Strong problem-solving skills and ability to work independently; requires independent, analytical and creative effort regarding proper procedures, planning of work and follow up
    • Hands-on mindset to accomplish tasks; requires adaptability to handle multiple projects simultaneously while addressing aggressive timetables for completion
    • Ability to work with cross-functional teams such as Training, Operations, Quality Assurance, Procurement
    • Basic knowledge of food production and processing at plant level; thorough knowledge of food safety standards, HAACP and Serve Safe Certification
    • CFIA and FDA Product Labelling knowledge (would be an asset)
    • SOP or operations guide use and development
    • Microsoft Office proficiency (Word, Excel, Powerpoint)
    • Minimal travel required
